We were welcomed at Conserveira do Arade by Vincent, Manuel, and Elisa. Prior to our visit, we had come across the phrase “made by people for people” on their website. As soon as we stepped into the canning factory, we understood the essence of this statement.
At the heart of this passion, entwined with business, lies the encounter between the dreamer Vincent and the caretaker Manuel, both passionate about the “merroir” of the Algarve. Leaving behind their careers, Vincent from Belgium and Manuel from England, they embraced the formula they always believed in: proprietary manufacturing processes.
Artisan Producer Certification
Throughout our visit, we observed and understood what led to the granting of artisan producer certification to this canning factory:
- Manual Production: With a focus on human capital over mechanized processes.
- Small-scale Production: Small controlled batches, resulting in excellent products.
- Raw Materials: Of the highest quality and local, preserving maximum freshness and respecting the region’s identity.
A Range of Unique Products
Portuguese canned goods, appreciated worldwide, went through a period of decline, as was the case in the Arade basin, which “was left without canning factories” at the end of the last century. Everything changed in 2015 with the birth of the Arade Canning Factory, bringing Vincent and Manuel’s dream to life.
Canned Delights
After concluding our guided tour, flavored with Vincent’s stories and sense of humor, Manuel and Elisa introduced us to their product range:
- Papa Anzóis canned goods: This canned goods brand consolidates the past, present, and future of the canning industry. With an elegant image, Papa Anzóis preserves the organoleptic properties of fresh fish through dehydration rather than pre-cooking. Sardines and mackerels seasoned with lemon and olive oil, chili and olive oil, or clove and olive oil. Authentic flavors that will leave no one indifferent.
- Saboreal jarred goods: Born from tradition and innovation, using shredded fish and Algarve vegetables and condiments. Mackerel, mackerel, tuna, sardine, mullet, and cod can be enjoyed in these colorful and flavorful snacks. These gourmet products can be savored in simple recipes, such as baked potatoes stuffed with Algarve-style tuna or pizza with sardine and arugula snack.
Creating a Gastronomic Experience
Combining “terroir” and “merroir” in a harmonization of wines and canned goods is enjoying a unique experience any time of the year. Wrapped in impromptu stories, we didn’t leave the Arade Canning Factory without first conducting a tasting.
- Villa Alvor Singular Sauvignon Blanc: To pair with the singularity of this Algarve Sauvignon Blanc, we opted for Papa Anzóis sardines canned in extra virgin organic olive oil, with lemon and olive oil. The purity of the grape variety, highlighted surprisingly in this exuberant yet delicate wine, paired perfectly with the sardines. In our group, there was no consensus on which canned option was more delicious.
- Villa Alvor Singular Alicante Bouschet: To appreciate the elegance of this Alicante Bouschet, we challenged our senses with Papa Anzóis sardines in spicy tomato. The aromatic intensity of this wine, with hints of ripe red fruit, paired very well with the sardines seasoned in tomato. With a velvety structure, this wine seduced us with its unctuousness.
